Cajun Chicken Gravy: A Comfort Food!

There’s nothing better than a good pot of chicken gravy over rice.

This is a true comfort meal...simple, hearty and full of flavor.

🛒 Ingredients you’ll need

  • 10 chicken thighs, deboned and de-skinned
  • 2 medium onions, chopped
  • 3 celery stalks, chopped
  • 1 large bell pepper, chopped
  • 2 cups water or chicken stock
  • Oil (for browning)

🛒 Seasonings

  • Salt & pepper (to taste)
  • Tony’s (or Cajun seasoning of choice)
  • Kinder’s Buttery Poultry seasoning (optional)
  • Garlic powder
  • Red pepper flakes

🍽️ Serve with:

  • White rice (a must!)
  • Mac and cheese on the side

Bonus Tip (Cajun-style twist):

Don’t throw away your beet leaves! Cook them down like collard greens with salt, pepper, and a splash of red wine vinegar—they’re surprisingly good.

Instructions:

  1. Brown the Chicken
    Heat oil in a cast iron pot.
    Add chicken thighs and brown on both sides (about 3 minutes per side).
    Remove and set aside.
  2. Season the Chicken
    Once removed, season the chicken with salt, pepper, Tony’s, and Kinder’s Buttery Poultry seasoning.
  3. Cook the Vegetables
    Keep all the browned bits (“the good stuff”) in the pot.
    Add onions, celery, and bell pepper.
    Cook for about 20 minutes, stirring occasionally, until the mixture becomes soft and develops a rich brown color.
  4. Build the Gravy
    Add the chicken back into the pot.
    Pour in 2 cups of water or chicken stock.
    Season with salt, pepper, Tony’s, garlic powder, and a pinch of red pepper flakes.
  5. Simmer
    Cover and let simmer for 45–50 minutes, until the chicken is tender and a gravy forms.
