Ingredients

For the Peaches

  • 4 cups sliced peaches (fresh or canned, drained)
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 cup water

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup butter, melted

Directions

  1. Preheat oven to 350 degrees.
  2. In a saucepan, combine peaches, sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla, cornstarch and water.
  3. Bring to a gentle simmer and cook about 8 to 10 minutes, stirring occasionally until the mixture begins to thicken.
  4. In a mixing bowl, combine flour, sugar, baking powder and salt.
  5. Stir in the milk until smooth.
  6. Pour the melted butter into a 9Ă—13 baking dish or cast iron skillet.
  7. Pour the batter evenly over the butter without stirring.
  8. Spoon the warm peach mixture over the batter.

Do not mix. The batter will rise around the peaches as it bakes. 9. Bake for 40 to 45 minutes, or until the top is golden brown and the peaches are bubbling. 10. Serve warm with vanilla ice cream or whipped cream.

Kitchen Tip

Fresh Louisiana peaches bring the best flavor to this cobbler, but canned peaches work well when fresh fruit is not in season.
