Grandpa’s Catch, Island Style: Tropical Baked White Perch
Sometimes the best meals come from what’s already in your kitchen — and what your grandpa brings home. This tropical-style baked white perch was light, healthy, colorful, and packed with flavor.
🐟 The Fish
I used 12 pieces of white perch that my grandpa caught and gave me — fresh always makes a difference.
Put the fish in a bowl and add:
- Salt & pepper
- Fresh garlic cloves
- Lime juice
- The secret ingredient: homemade beet, orange, kiwi & papaya juice( I have no measurements for the juice, I just had it in my fridge, and used my imagination) I used about ¼ of a cup of this juice. The beets give the fish a beautiful bright color and a subtle sweetness.
Mix everything well so the fish is fully coated.
🔥 Baking It
- Drizzle olive oil in a baking pan
- Lay the fish flat
- Add large sliced onions around and on top of the fish (You can also add bellpeppers)
- Bake until flaky and tender
🤍 The Creamy Lime Sauce
This part gets fun.
Mix together:
- Less than ½ cup sour cream
- Lime juice (however much your heart desires)
- Salt & pepper
- A little Pineapple Hobenero hot sauce
This creamy, tangy sauce balances the tropical flavors perfectly.
🍍 Tropical Pico Topping
For the topping, I made a tropical-style pico de gallo:
Chop:
- Pineapple
- Purple onion
- Radish
Add:
- Lime juice
- Salt & pepper
- A splash of pineapple habanero hot sauce 🌶️
Sweet, spicy, crunchy, and fresh — it takes the fish to another level.
🥕 The Side
As a side dish, I cooked large carrots cut in half — simple, healthy, and the perfect complement. You can also cook some plain rice with a little olive oil for some carbs.
🌮 How to Serve It
You can enjoy this:
- Plain
- In a tortilla (My Husbands Option)
- Or in a lettuce wrap (My Option)
It was a light supper, but incredibly flavorful and nourishing — proof that healthy food doesn’t have to be boring.
