Delapasse Family Vegetable Soup
This recipe is simple, comforting, and perfect for a quick lunch or easy supper, especially on cold days. It’s a longtime favorite from the Delapasse family cookbook of Addis, Louisiana, proving that the best meals are often the most straightforward.
Ingredients
- 1 lb lean ground beef
- ½ cup chopped onion
- 2 cans (14½ oz. each) Italian-style stewed tomatoes
- 2 cans (13¾ oz. each) beef broth
- 1 can (17 oz.) mixed vegetables, drained
- ½ cup uncooked medium egg noodles
- ½ teaspoon oregano
- Salt and pepper, to taste
Directions
In a large pot, brown the ground beef with chopped onion until the onion is tender. Drain excess fat and season with salt and pepper.
Add remaining ingredients and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes, or until noodles are tender.
Yield: 8 servings (1 cup each)
